The Florentine steak is the symbol of Tuscan cuisine and one of the most iconic dishes at Ristorante Il Bargello, in the heart of Florence, in Piazza della Signoria.
A true fiorentina is recognised by its iconic T-bone, which separates the loin from the fillet, and comes to life through open-view cooking over a wood-charcoal grill, the distinctive element that brings out the meat’s authentic flavour.

At Il Bargello we carefully select four types of meat, for a complete experience:
Scottona: tender and flavourful, with sweet notes
Chianina: the historic Tuscan breed
Gran Vacca: more mature, with yellow fat and an intense, lingering flavour
Dry-Aged: long-aged, for a deep, structured taste

For those who want to experience meat as more than just a dish, there’s Il Gioco della Bistecca: our tasting journey dedicated to the fiorentina.
It begins with raw cuts, beef tartare and carpaccio. It continues with three selections of grilled steaks, Scottona, Gran Vacca and Dry-Aged cooked over charcoal and served without sides, with just salt and Tuscan bread, as tradition demands.
After the meat, a mixed-leaf salad with aromatic herbs. To finish, our Tiramisù dell’Amicizia, for a close that blends taste and conviviality.

The ritual of the Bell
Our most impressive steaks have a ritual of their own: when a fiorentina over 1.5 kg comes out, the guest rings the Steak Bell, wearing the Bargello hat. A bell that Marco and Claudio brought all the way from Cerignola.
